Molten Chocolate Cakes
Recently a list of courses for a group of retirees at a seniors’ college included basic cooking with ideas for simple recipes which wouldn’t require too much preparation. Many of the clients were single or empty nesters with busy lives, so there was lots of interest in a variety of suggestions which would be suitable for this age group and their peers. There was a request for ideas for desserts, some of which could be used at home or taken to potluck events. Sometimes only the taste of chocolate will satisfy a need for the right dessert. There are many recipes which include chocolate as an ingredient and these range from cakes to brownies to mousses. Many recipes require a multitude of components and a lengthy list of instructions. These have no place for the novice in the kitchen. We are looking for a simple chocolate recipe. And there’s no age requirement- this will appeal to everyone.
Here’s the information for Molten Chocolate Cakes which can be put together in about fifteen minutes and take about the same length of time to bake. It provides eight servings with a half individual cake per person.
4 squares of semi-sweet chocolate (choose your favourite brand)
½ cup butter
1 cup icing sugar
2 eggs (whole)
2 egg yolks (if you aren’t sure how to separate the yolks, ask an experienced cook. When this question was asked in the class, another member arrived the next class with a dollar store egg separater)
6 tbsp flour
8 tsp thawed whipped topping (Cool Whip is fine, but you may have your own choice)
Here are the directions:
Heat oven to 425F
Butter four custard cups or ramekins (each should hold about three-quarters of a cup). Place on cookie sheet.
Microwave chocolate and butter in a good sized bowl on high for 1 minute or until butter is melted. Stir with whisk until chocolate is completely melted. Add 1 cup sugar. Mix well. Blend in eggs and egg yolks. Stir in flour. Pour into custard cups.
Bake 13 – 14 minutes or until sides are firm but centres are still soft. Let stand 1 minute. Run a small knife around the edges of cakes to loosen them. Invert cakes onto dessert plates. Remove cups. Cut in half. Dab with some Cool Whip (optional) and serve.
These molten mini cakes should satisfy the need for chocolate. Enjoy!
