How to Make Low Fat Ice Cream

Here is a recipe for vanilla ic-cream. You can change the ingredients to make it low fat if you choose. If you aren’t worried about fat content you can use whole milk and whole condensed milk. You can also stir through any kind of add ins you want. For example you could include cookies, nuts, berries, chocolate or anything at all that you fancy. Vanilla is a good flavor for adding things in at is a good base flavor and so your add in will stand out. Add ins will add to the fat content though so be careful with your choices.

You will need an ice-cream maker for this recipe. This machine will also allow you to make other recipes like sorbet and gelato so is a good investment.


3 cups of milk

3 egg yolks (discard the whites or save them for another recipe)

1 can of sweetened condensed milk (you can get the non-fat variety to reduce calories)

2 tablespoons of water

2 tablespoons of gelatin

1 – 2 vanilla beans

To prepare:

Add the gelatin to the water and let it stand, stirring occasionally. While the gelatin mixture is setting, pour half of the milk into a saucepan. Scrape the seeds from the vanilla beans into the milk and then heat the milk until it is steaming. Do not let it boil.

Combine the egg yolks and condensed milk in a bowl and whisk. Add the hot milk gradually and stir as you pour. Pour the mix back into the pan once it is combined and heat it again while stirring. You should use a medium heat for about 4 minutes or so.

Now add in the gelatin mix and whisk it through until it has melted. Now you will need to pour it into an ice-cream maker and follow the instructions.

If you do not have an ice-cream maker you could probably just freeze the mixture and it would still turn out nice.
